MOCK EGG WHITE PIZZA

Ingredients:
2 phulkas, 3 egg whites, 1/2 cup chopped capsicum and tomato, 1/4 cup chopped onions, finely chopped green chillies, salt, oil

Method:
Whisk egg whites properly alongwith green chillies, vegetables and salt. Heat oil in a pan and add the egg white mixture to it. Cook till the mixture becomes semi-solid . Place this stuffing between two phulkas and cook on both sides using very little oil. Cook till the phulkas are cooked(become slightly brown). Cut with the help of pizza cutter into pizza like pieces. Serve hot.

YUMMY SCRAMBLE

Ingredients:
6 eggs ,1cup skimmed milk,1/2cup chopped mushrooms,1diced capsicum chopped, 1tsp oil 1 gr chilli chopped into two salt and pepper to taste

Method:
Separate yolk from white n discard ( or use it for conditioning ur hair) beat egg white keep it aside .Take a thick bottom pan heat 1tsp oil put 1green chilli saute mushroom add egg whites stir then add milk keep stirring add capsicum salt n pepper serve hot

BAKED STUFFED EGGS

Ingredients:
6 hard boiled eggs,11/2 cup skimmed milk , 2 tbsp flour, 1/2 cup chopped mushrooms,1 small onion chopped,1 diced capsicum, salt and pepper to taste

Method:
Slice eggs into halves and discard yolks Mix the flour and milk and keep to boil Add to it mushrooms, capsicums, onions, salt pepper Cook till the mixture thickens Now stuff this white sauce mixture in egg whites Now take a baking dish grease with a few drops of oil arrange the eggs in the dish sprinkle little mixed hers and little black pepper on the the eggs. Bake in the oven for 7-8 mins Serve hot

EGGS ON TOAST

Ingredients:
6 boiled egg whites, 4 bread slices, 2 cups skimmed milk, 3 tbsp wheat flour,1 diced capsicum,1 small onion, 2 green chilies, Salt and pepper to taste

Method:
Grate the egg whites. Mix milk and flour in pan and keep to boil. Add all the ingredients. Now apply this mixture generously on bread slices. Now grill it in the oven till crispy..cut and serve

EGG CASSEROLE

Ingredients:
2 boiled eggs, 2 onions, 1/2 cup boiled green peas, 2 tbsp breadcrumbs, 2 tbsp maida, 31/2 cups skimmed milk, salt and pepper to taste.

Method:
Dissolve the maida in little cold milk. Add it to the rest of the milk and bring to a boil. Stir continuously and boil till thick. Add salt and pepper to taste. Slice the onions heat 1tsp of oil in a pan and saute onion on slow flame till brown. In a baking dish arrange the browned onions. Discard the egg yolks and slice the whites lengthwise into 4 pieces. Arrange the egg slices on the onions mix the peas with the white sauce and pour over the eggs. Top with breadcrumbs and bake for 10 mins

BOILED EGGS IN MUSHROOM SAUCE

Ingredients:
4 boiled eggs, 100-150 gm mushrooms, 11/2 tbsp maida, 11/2 cup of skimmed milk, salt, pepper and mustard to taste, a few drops of lemon juice, 2 tbsp chopped parsley or coriander, 2 green chillies-deseeded and chopped.

Method:
Cut the eggs into two halves and discard the yolks place in a baking dish sprinkle some salt and pepper. Heat 1 tsp of olive oil in a pan add chopped mushrooms, stir for 1-2 mins till soft. Sprinkle the maida on the mushrooms and saute till light brown. Lower heat and add milk. Boil till milk thickens add salt, pepper, mustard powder, few drops of lemon juice and parsley or coriander leaves. Add green chilies. Pour the sauce over the eggs sprinkle breadcrumbs on top and bake for 7-10 mins.

OMELETE WITH POTATO FINGERS

Ingredients:
2 egg whites, 1/2 potato cut into thin slices like french fries, 1/2tsp olive oil, salt and pepper to taste

Method:
Cut the potatoes like thin french fries. Heat the olive oil in a non- stick pan, add potato and saute till done add salt and toss. Beat egg whites till light and fluffy in the same pan pour the egg whites sprinkle the potatoes all over the whites. Cook on very low flame covered with a lid. When done cover the pan with a plate and overturn on it.

OMELETE WITH MUSHROOMS

Ingredients:
2 egg whites, 5-6 mushrooms thinly sliced, 2 flakes garlic, 1/2 onion finely chopped, 1/2 tsp mixed herbs, salt and pepper to taste.

Method:
Heat 1/2 tsp oil in a pan add garlic and onion and saute well, then add sliced mushrooms, mixed herbs and salt and saute till done. Beat the egg whites till soft peaks are formed add salt to taste. In a frying pan heat the remaining oil add the egg whites when it sets a little put the mushroom mixture in the centre and keep on slow flame till done. When ready fold the omelet into half and serve.

TOMATO EGG DROP SOUP

Ingredients:
2 cups chopped tomatoes, 1/2 cup chopped onions, 1/2 tomato ketchup, 2 tsp coriander leaves, 2 tsp soya sauce, 3 egg whites, 1/4 tsp pepper, 1 tsp oil, 2 tbsp corn flour, 1/4 tsp chilly pwd, salt to taste, 3 cups water or vegetable stock

Method:
Heat oil add chopped onions and saute for 2 minutes. Add tomato ketchup and cook for a while. Add chopped tomatoes and cook for 3-4 minutes. Add water or vegetable stock and bring to a boil, add soya sauce, salt and pepper. Dissolve corn flour add to the soup boil till thick. Beat egg whites till fluffy and add to the soup. Add coriander and serve.

VEGETABLE SOUP WITH EGG WHITES

Ingredients:
1 small carrot, 4-5 mushrooms, 6-7 french beans, 2 baby corns, 2 cups water or vegetable stock, 2 egg whites, salt and pepper to taste

Method:
Bring the water or stock to a boil add the vegetables and cook for 3-4 mins. Add salt and pepper to taste. Beat egg whites drizzle over the soup

FRENCH TOAST

Ingredients:
2 slices of bread, 2 egg whites, 2 tsp fresh coriander or parsley, salt and pepper to taste

Method:
Beat egg whites till light and fluffy add to it salt, pepper and coriander/parsley dip the bread in the egg mixture. Heat oil in a fry pan put the bread in the pan cook on slow on both the sides till done.

DOSA WITH EGG WHITE

Ingredients:
1 ladle (approx half a small katori ) of dosa batter, green chilies to taste 2 tbsp of fresh coriander leaves, 1 small onion finely chopped-optional, salt to taste

Method:
Stir the egg whites in the dosa batter. Add all the other ingredients. Heat a non-stick pan add a few drops of oil pour the batter and make like a normal dosa. Cook on both the sides. Have with South Indian mulago podi or any other available accompaniment.

EGG WHITE SALAD WITH BELL PEPPERS

Ingredients:
4 egg whites cut into cubes, 1/4 each of red and yellow bell peppers, 1 stalk of celery finely chopped, 1 tbsp dijon mustard paste, jalapenos to taste, salt and pepper to taste.

Method:
In a bowl add all the ingredients together and toss the salad till well coated. This can be eaten hot or cold.

EGG WHITE THORAN

Ingredients:
4 egg whites-finely chopped, 1 small onion finely chopped, 1/2 tsp coriander powder, 1/2 tsp rai, 2 tbsp each of fresh coriander and fresh mint leaves a pinch of haldi, red chili powder to taste, green chilies to taste, few curry leaves, salt to taste

Method:
Heat 1 tsp of oil add rai and let it splutter , add green chilies, kadi patta and onions saute. Add coriander powder, red chili powder, haldi and salt. Saute add the chopped egg whites and the fresh coriander and fresh mint leaves. Mix well
